Schezwan Fried Rice

cup peanuts, roasted & salted (if desired)
cup green onions, chopped
tablespoon creamy peanut butter
tablespoons soy sauce
tablespoon Korean chili powder
packets (12 ounce) frozen buttery rice & vegetables
Add buttery rice & vegetables packet, chili powder, soy sauce, garlic, and peanut butter to a large skillet. Heat over medium-high heat, stirring until the veggies are thawed and warm.
Remove from heat, stir in the green onions.
Serve topped with fried or poached eggs, and sprinkled with peanuts (optional). Enjoy!
